Miguel Quevedo grew up immersed in the restaurant industry, working alongside his family at La Esperanza, a beloved local restaurant established by his grandparents in 1976. The restaurant’s name, which translates to hope, became a guiding principle for Miguel. After spending years helping manage the family business, he began dreaming of launching something of his own—a venture that would carry on the family legacy while offering a new twist on traditional flavors.
Miguel’s wife, Ivette, has known him nearly all her life. With her mother working as a cook at La Esperanza, the pair shared a deep connection to food, family, and community. It wasn’t long before Miguel began talking about opening a food truck—an idea sparked by a trip to Los Angeles where he and his father explored the bustling food truck scene.
Turning Dreams into Reality
Like many others, the COVID-19 pandemic reshaped their world. While it brought uncertainty, it also opened new opportunities. The rising popularity of food trucks during the pandemic motivated Miguel to take a leap of faith. “Now’s the time,” he thought. Together, Miguel and Ivette pooled their savings, initially set aside for their wedding, to secure a contract for their dream food truck. However, they soon realized they needed additional funding to cover the remaining costs.
